Any suggestions?

I'm home alone for a week now and really want to focus on some great, high-veggie, low-sugar, (possibly vegan or nearly vegan?) meals for one this week. I eschew highly processed foods as much as possible. Any suggestions? I have stir-fry on the menu but nothing else yet. A small amount of cheese or other dairy (or eggs, even--okay, that's very far from vegan, I know) would be okay, but I am craving some simple meals that show off fresh veggies, whole grains, and vegetarian protein.

My husband and I made a great vegetable ragout based on a delicious one we had in a restaurant. I might post a photo/recipe on my site sometime. I don't remember the whole recipe now but I know it includes lightly frying brusell sprouts and fennel in olive oil and cooking that will lima beans, potatoes, and few other ingredients in a small amount of butter and thyme. You can eat it with poached egg. It's delicous and healthy and a great showcase for fresh veggies. I'm sure you can find some good recipes for it online. I'll try to get our recipe from my husband (we made it up based on the meal at the restaurant but I've since forgotten) and post it on my site.

Other things we make: grilled veggies/veggie kabobs, soup and salad, bean salad, pasta salad with fresh veggies, stir fry, veggie burgers with sweet potato fries, burritos with sides of veggies . . .
